Some years ago at a restaurant in New York whose name I have forgotten, our meal came with a few roasted parsnips sprinkled with gingerbread crumbs. The parsnips were fabulous - not surprising since they have a total affinity for spices such as nutmeg and ginger.
So my version was to roast the parsnips as I did here, and five minutes or so before removing them from the oven, sprinkling over my magic cookie dust and whacking them back in the oven to warm up and release their sweet spicy aromas.
I suspect that this is the perfect Christmas side dish, although to my mind it is a must whenever parsnips are in season. Definitely worth having a baking disaster for, (or just sacrificing a few spiced biscuits from your latest bake).

How did your mantecados turn out?
Well if not parsnips, what about squash? Or even kale?
As for the mantecados - they are in my to-do list - I made stollen and a curry today (with crumbs!) I have the lard and the nuts but not anise . . . but I will definitely be baking them by the weekend!
