Nigel Slater's mincemeat cheesecake
I am looking for a fitting use for my very last jar of 2011's homemade mincemeat. Whether I am looking for inspiration, rescue or just a good read, I turn to Nigel Slater. His latest book, Kitchen Diaries II contains a recipe for mincemeat cheesecake (and the recipe can be found here on The Guardian newspaper website).

It looked rather nice, but I have a teensy problem with baked cheesecakes. I have just never made one successfully. Everything is alright until the cheesecake goes in the oven. At which point the damned thing makes a bid for a freedom and oozes out from the bottom of the tin leaving me with a mess of soggy biscuit and an oven to clean. I am grumpy, frustrated and hungry.


But I like cheesecakes, I really do. And I've said it before, I trust Nigel. So if he says it can be done, I can do it. He did, and I did and here it is - the perfect end for a jar of mincemeat 2011. (It is what it would have wanted.)

My only adaptation was that I didn't have enough orange zest to top the cheesecake, so just dusted it with icing sugar. It was that simple.

look at us making mincemeat cake on the same day... yours is glorious!... love the idea of using it in cheesecake, fab stuff... Merry Christmas x

Thank you, Dom. It tasted pretty good too, if I say so myself :)

As for mincemeat cake on the same day - that is because we have great food minds!!! (she says modestly!)
