Cuban sour orange mojo sauce
A mojo sauce is a mixture of garlic and oil which is often used either as a marinade for chicken or fish or as an accompaniment for meat or fish, rice or potatoes. It is so versatile since you can cook it or just use as a marinade or dip or drizzle over cooked rice, couscous or salad vegetables. It is the perfect way to use Seville oranges, which have a beautifully tart flavour.

I made this to go with my Cuban roast chicken and it was delicious!


Skill level: Easy

ingredients:
100ml olive oil
1 x onion, finely chopped
10 x garlic cloves, roughly chopped
1 tbsp fresh coriander leaves
1 tsp fresh oregano leaves
1 tsp ground cumin
100ml fresh orange juice (seville orange if you can get it)
juice of 3 x fresh limes
salt and freshly ground black pepper

directions:

  1. Simply combine all the ingredients and blend. It really is that simple.

tips:

  • Use as a marinade, a dip or as a dressing for cooked meat and fish or salad.
  • I used a combination juices, including Seville oranges - they are not in season, but I had squeezed some of the juice and frozen it last spring. Nothing like thinking ahead!

I loved this so much - definitely making it again. What was left got drizzled over some cooked rice last night and every last grain was eaten up!
